  • 3.4 ounce instant pistachio pudding mix 1 box
  • 20 ounce crushed pineapple 1 can, undrained
  • 8 ounce Cool Whip 1 container, thawed
  • 2 cup mini marshmallows
  • 1 cup chopped pecans or walnuts

Preparation Steps
  1. In a large bowl, add the instant pistachio pudding mix and the crushed pineapple (with its juice). Stir well to combine until smooth.
  2. Gently fold in the thawed Cool Whip until fully incorporated. Then, stir in the mini marshmallows and chopped pecans (or walnuts).
  3. Cover the bowl and chill in the refrigerator for at least 30 minutes before serving. This allows the flavors to meld and the salad to set.

Notes

For best results, make sure the Cool Whip is thawed before mixing. Store any leftovers in an airtight container in the refrigerator for up to 3 days. Optionally, you can add 1 cup of shredded sweetened coconut or chopped maraschino cherries for extra flavor and color.
