- Add turkey sausage meat, breaking it into large chunks with a spatula or wooden spoon. Cook until completely browned.
- Add minced garlic and sauté for 2-3 minutes, being careful not to let the garlic burn.
- Pour in water and chicken stock, then add beans and red pepper flakes if using. Stir well.
- Reduce heat to low, cover, and simmer for 10 minutes.
- Add chopped kale to the pot, cover, and cook for an additional 10 minutes, adjusting seasoning with salt and pepper as needed.
- Divide the soup into bowls and serve hot.
