Preparation Steps
- Brown the ground turkey in a large sauté pan over medium heat. Season with salt and pepper. Use a wooden spoon to break the meat into small pieces.
- While the turkey is cooking, prepare the sofrito by finely chopping the onion, garlic, red bell pepper, tomato, and cilantro. You can use a mini chopper for speed.
- Add the prepared sofrito to the browned turkey and continue cooking over low heat.
- Stir in the green olives and their brine, cumin, and bay leaves. Add more salt if needed.
- Add the tomato sauce and water, mixing everything well.
- Reduce the heat to low, cover the pan, and let it simmer for 15 to 20 minutes to allow the flavors to meld.
