  • 6 cups rotini pasta cooked
  • 1 lb ground beef
  • 1 tsp garlic powder
  • 0.19 cup salsa divided
  • 0.16 cup extra virgin olive oil divided
  • 0.5 tbsp cumin
  • 1 tsp chili powder
  • 1 tsp oregano
  • 1 cup cherry tomatoes cut in half
  • 1 red pepper diced
  • 3 green onions sliced
  • 1.5 cups cheddar cheese shredded
  • 0.5 cup cilantro chopped
  • salt to taste
  • pepper to taste

Method
 

Preparation Steps
  1. In a medium skillet over medium-high heat, add 1 tablespoon of extra virgin olive oil. Once the skillet is hot, add ground beef, garlic powder and 3 tablespoons of salsa. Cook until the meat is browned (about 8 to 10 minutes). Drain the excess grease. Set aside.
  2. Add the cooked pasta to a large salad bowl. Add the beef mixture, tomatoes, red pepper, green onion, cilantro and cheddar cheese. Mix to combine.
  3. Add ΒΌ cup olive oil, 1 cup salsa, cumin, chili powder, oregano, salt and pepper. Stir until everything is combined. Chill in the fridge until ready to serve. Serve cold.

Notes

This Taco Pasta Salad is best served chilled. It's a great make-ahead dish for picnics and parties.
