Ingredients

Main Ingredients
  • 2.25 cups graham cracker crumbs
  • 3 tablespoons sugar
  • 0.5 cups salted butter melted
  • 24 ounces cream cheese room temperature
  • 1 cups sugar
  • 3 tablespoons all purpose flour
  • 0.75 cups sour cream room temperature
  • 1.5 tablespoons vanilla extract
  • 3 large eggs room temperature
  • 1.5 cups sugar
  • 2 tablespoons cornstarch
  • 1 cups pureed strawberries from about 1 lb strawberries
  • 0.5 tsp vanilla extract
  • 2 cups chopped strawberries
  • 0.5 cups heavy whipping cream cold
  • 0.25 cups powdered sugar
  • 0.5 tsp vanilla extract

Method

Preparation Steps
  1. Preheat oven to 325°F. Grease a 9x13 inch pan. Mix graham cracker crumbs, sugar, and melted butter to form crust. Press into the bottom of the pan. Bake for 10 minutes and set aside to cool.
  2. Reduce oven temperature to 300°F. Beat cream cheese, sugar, and flour until smooth. Add sour cream and vanilla, mix well. Add eggs one at a time, mixing on low speed after each addition.
  3. Pour batter over crust. Bake for 30 minutes. Turn off oven and leave cheesecake inside for 20 minutes. Crack oven door and let cool for 15 minutes. Chill in fridge for 3-4 hours.
  4. Prepare topping: combine sugar and cornstarch, stir in strawberry puree. Cook until thickened, about 15-20 minutes. Remove from heat, stir in vanilla and chopped strawberries. Cool slightly.
  5. Spread strawberry topping over cooled cheesecake. For whipped cream, beat heavy cream, powdered sugar, and vanilla until stiff peaks form. Serve cheesecake with whipped cream if desired.
