Ingredients
  

Spinach Artichoke Filling
  • 1 package frozen chopped spinach 10 ounce, thawed and squeezed dry
  • 1 can artichoke hearts 14 ounce, drained and chopped
  • 0.5 cup mayonnaise
  • 0.5 cup grated Parmesan cheese
  • 0.5 cup shredded mozzarella cheese
  • 2 ounces cream cheese softened
  • 0.25 teaspoon garlic powder
  • Salt to taste
  • Black pepper to taste
For the Bites
  • 1 package refrigerated biscuit dough 10 count, small size like 'Grands! Jr.'

Preparation Steps
  1. Preheat your oven to 375°F (190°C). Lightly grease a 24-cup mini muffin tin.
  2. In a medium mixing bowl, combine the thawed and squeezed dry spinach, chopped artichoke hearts, mayonnaise, Parmesan cheese, mozzarella cheese, softened cream cheese, and garlic powder. Mix everything until it's thoroughly combined and creamy. Season with salt and black pepper to your preference.
  3. Open the package of biscuit dough. On a lightly floured surface, gently flatten each biscuit. Then, cut each biscuit into four equal quarters.
  4. Press each biscuit quarter into the prepared mini muffin tin cups, gently shaping it to form a small cup or crust for the filling.
  5. Spoon about 1 tablespoon of the spinach artichoke mixture into each biscuit cup, filling them evenly.
  6. Bake for 15-20 minutes, or until the edges of the biscuit cups are golden brown and the filling is hot and bubbly.
  7. Allow the Spinach Artichoke Bites to cool in the muffin tin for a few minutes before carefully removing them and serving warm.

Notes

These delicious bites are best served warm, right out of the oven, but they also taste great at room temperature. They're perfect for game day, potlucks, or any gathering!
