  • 2 cups white rice
  • 4 cups chicken broth or stock
  • 2 tablespoons butter
  • 1 large yellow onion chopped small
  • 6 cloves garlic
  • 28 ounces petite diced tomatoes do not drain
  • 1.75 tablespoons chile powder approximately 1.5 to 2 tablespoons
  • 1 tablespoon cumin
  • 1 tablespoon smoked paprika
  • 1 dash kosher salt adjust to taste

Method
 

Preparation Steps
  1. In a large skillet, combine the rice and chicken broth over high heat and bring to a boil. Reduce heat to low and cover; simmer for 18-20 minutes until the rice is tender. Fluff with a fork and keep warm.
  2. Melt butter in a skillet over medium-high heat. Add chopped onions and sauté until translucent, about 2 minutes.
  3. Add minced garlic, cook for 30 seconds. Stir in diced tomatoes and spices, bring to a boil. Reduce heat, cover, and simmer for 10 minutes.
  4. Mix the cooked rice into the tomato mixture, stir well. Turn off heat, garnish with cilantro if desired, and serve.
