  • 1 tablespoon olive oil
  • 2 tablespoon fresh minced cilantro or more to taste
  • salt to taste
  • fresh pepper to taste
  • 1 medium Hass avocado diced
  • 1 diced jalapeno optional

Preparation Steps
  1. In a large bowl, combine black beans, corn, tomato, red onion, scallion, cilantro, salt, and pepper.
