Preparation Steps
- Preheat the smoker to 250°F.
- Sprinkle the turkey breast with salt, then rub with Cajun seasoning, smoked paprika, black pepper, onion powder, and garlic powder.
- Place the turkey breast in the smoker and smoke until the internal temperature reaches 150°F, about 1 hour and 45 minutes.
- While smoking, melt butter over medium heat in a small saucepan. Add chopped dill and parsley, and stir to combine.
- At 115°F internal temperature, baste the turkey with the herb butter. Continue basting at 135°F and 150°F.
- Once the internal temperature reaches 160°F, remove the turkey from the smoker, baste with remaining butter, and let rest for 30 minutes before slicing.
Notes
Make sure to allow the turkey to rest to retain its juices.
