- In a bowl, whisk together orange juice, lime juice, achiote paste, cumin, oregano, salt, and pepper until well combined.
- Place chicken thighs in a slow cooker. Top with sliced onion and minced garlic.
- Pour the achiote mixture over the chicken, ensuring it's evenly distributed.
- Cover and cook on low for 4-6 hours, or on high for 2-3 hours, until chicken is tender and cooked through.
- Remove chicken from the slow cooker and shred it with two forks. Return shredded chicken to the sauce in the slow cooker and stir to coat.
- Serve hot with your favorite sides.
Notes
This chicken is delicious served in tacos, burritos, or over rice. Garnish with pickled red onions and cilantro for an extra pop of flavor.
