Ingredients
  

Main Ingredients
  • 3 tablespoons olive oil
  • 1 medium red bell pepper chopped
  • 2 medium carrots peeled and sliced fairly thin
  • 0.5 medium red onion chopped
  • 2.5 cups broccoli florets cut into bite size pieces
  • 1 medium yellow squash sliced
  • 1.5 teaspoons minced garlic
  • 1.5 teaspoons fresh thyme leaves
  • Salt and freshly ground black pepper
  • 2 tablespoons chopped fresh parsley
  • 1.5 teaspoons fresh lemon juice
  • 0.25 cup grated parmesan cheese optional, for serving

Method
 

Preparation Steps
  1. Heat olive oil in a 12-inch skillet over medium-high heat.
  2. Add bell pepper, carrots, onion, and broccoli. Saute for 4 minutes, tossing occasionally.
  3. Add squash and saute for 3 minutes.
  4. Toss in garlic, thyme, and season with salt and pepper. Saute for 2 minutes or until vegetables are tender.
  5. Sprinkle with parsley and lemon juice, toss. Serve topped with parmesan cheese if desired.
