  • 1.5 lbs large shrimp
  • 0.5 cup low-fat coconut milk
  • 2 Tbsp red curry paste
  • 1.5 tsp minced fresh ginger
  • 2 cloves garlic minced
  • 0.5 jalapeño jalapeño optional, minced
  • 2 limes limes for juice and zest
  • 2 red red bell peppers
  • 8 large skewers skewers
  • 1 tbsp cooking spray
  • 0.25 cup chopped cilantro for serving

Method
 

Preparation Steps
  1. Pat the shrimp dry and season with a pinch of salt.
  2. Mince the garlic, ginger, and jalapeño.
  3. Mix coconut milk, red curry paste, ginger, garlic, and lime zest and juice in a bowl.
  4. Thread shrimp, chopped peppers, and lime wedges onto skewers.
  5. Preheat grill to high and spray with cooking spray.
  6. Grill skewers for 3-4 minutes per side, brushing with curry mixture as needed, until shrimp are cooked and vegetables charred.
  7. Remove skewers, sprinkle with chopped cilantro, and serve with lime wedges.
