Preparation Steps
- Place chicken breasts in the slow cooker and add 2 cans of rinsed black beans and 2 cups of chicken broth; blend the remaining beans with 1 cup of broth and add to the cooker.
- Add the tomatoes, bell pepper, green chiles, cumin, ancho chili powder, garlic powder, onion powder, oregano, and half of the cilantro to the slow cooker.
- Set the slow cooker to high and cook for 4 hours, or low for 6-8 hours.
- Once cooked, remove chicken and shred with two forks, then return to the slow cooker.
- Stir in the remaining cilantro and adjust salt and cumin to taste.
- Serve hot with sliced avocado, scallions, lime wedges, and optional sour cream.
