Peanut Pie

A delicious southern dessert sometimes called, "The poor man's pecan pie". It has a sweet filling topped with toasted peanuts.

  • 1 9-inch frozen unbaked pie shell
  • 1 cup golden corn syrup
  • 3 large eggs
  • 3 tbsp all-purpose flour
  • 2 tbsp unsalted butter melted
  • 0.25 tsp salt
  • 1 cup whole peanuts toasted

Method
 

Preparation Steps
  1. Preheat oven to 375°F.
  2. Add corn syrup, eggs, flour, butter and salt to a large bowl. Beat with an electric mixer on medium speed until combined and smooth.
  3. Spread peanuts in the bottom of the pie shell. Pour mixture from the bowl on top.
  4. Bake for 30 minutes or until filling is firm and set.
  5. Serve with whipped cream, if desired.
