  • 0.5 cup granulated sugar for simple syrup
  • 0.5 cup water for simple syrup
  • 1 medium cucumber peeled and thinly sliced
  • 10 sprigs fresh mint
  • 0.5 cup fresh lime juice
  • 4 cups chilled sparkling water
  • 1 each lime sliced for garnish
  • 4 sprigs fresh mint for garnish

Preparation Steps
  1. To prepare the simple syrup, combine 0.5 cup granulated sugar and 0.5 cup water in a small saucepan. Heat over medium heat, stirring continuously until all the sugar is completely dissolved. Remove from heat and allow the simple syrup to cool down to room temperature.
  2. In a large pitcher or mixing bowl, gently muddle the thinly sliced cucumber and 10 sprigs of fresh mint. Press just enough to release their fragrant oils and juices without over-muddling.
  3. Add the cooled simple syrup and 0.5 cup fresh lime juice to the pitcher with the muddled cucumber and mint. Stir well to ensure all ingredients are thoroughly combined.
  4. Strain the mixture into a clean pitcher, pressing down firmly on the solids (cucumber and mint) with a spoon or muddler to extract as much liquid as possible. Discard the strained solids.
  5. Top the strained cucumber-lime mixture with 4 cups of chilled sparkling water. Stir gently to incorporate the sparkling water without losing too much of its fizz.
  6. Serve the Light Summer Cucumber Mint Sparkler immediately over ice. Garnish each glass with a slice of fresh lime and an extra sprig of mint for a beautiful presentation and added aroma.

Notes

For an extra refreshing twist, you can freeze some cucumber slices or mint leaves in ice cubes and use those for serving.
