- Heat the olive oil in a large skillet over medium heat. Add the minced garlic and cook until fragrant, about 30 seconds.
- Add the drained and rinsed jackfruit to the skillet. Use a spoon or spatula to shred the jackfruit into bite-sized pieces.
- Sprinkle the brown sugar, paprika, chili powder, and onion powder over the jackfruit. Stir well to coat evenly.
- Pour in the barbecue sauce and stir to combine. Cook for about 5 minutes, allowing flavors to meld and jackfruit to become slightly caramelized.
- While the filling simmers, prepare the buns by toasting them lightly.
- Assemble the sandwiches by spooning the BBQ jackfruit onto the toasted buns. Top with slaw and optional avocado slices.
- Serve immediately and enjoy!
