Preparation Steps
- Cook pasta according to package directions for al dente in a large pot of salted water. Reserve 1/2 cup of pasta water before draining.
- While pasta water boils, heat a large non-stick skillet over medium heat.
- Add olive oil; when hot, add chopped onions, garlic, salt, and pepper; sauté until soft, about 4-5 minutes.
- Add sausage, breaking it up with a wooden spoon; cook until golden, about 6-8 minutes. Transfer to a dish and set aside.
- Add chicken broth and beans to the skillet; stir to combine.
- Add the torn escarole; stir and cook about 4 minutes or until wilted.
- Gently stir in the cooked sausage, drained pasta, crushed red pepper, reserved pasta water, and grated cheese. Adjust salt and pepper if needed. Toss well.
