  • 0.25 teaspoon kosher salt

  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 2 medium vine ripe tomatoes
  • 2 cloves garlic (minced)
  • 2 tablespoons chopped fresh basil leaves
  • 4 ounces diced avocado from small avocado

Preparation Steps
  1. Combine chopped red onion, olive oil, balsamic vinegar, kosher salt, and black pepper in a bowl and set aside for 5 minutes.
  2. Chop the tomatoes and place in a large bowl. Add minced garlic, chopped basil, the onion-balsamic mixture, and season with salt and pepper. Let sit for at least 10 minutes.
  3. Preheat the grill to medium-high, lightly oil the grates to prevent sticking.
  4. Season the salmon fillets with salt and black pepper.
  5. Place fillets skin-side down on the grill. Close lid and cook for about 8-10 minutes until just cooked through.
  6. Remove salmon, cover with foil, and let rest for 2-3 minutes while preparing the avocado topping.
  7. Top each salmon fillet with the prepared tomato salsa and diced avocado.
