  • 8 slices fresh pineapple 0.5 inch thick, from 1 whole pineapple
  • 2 tbsp dark honey
  • 1 tsp olive oil
  • 1 tbsp fresh lime juice
  • 1 tsp ground cinnamon
  • ice cream optional for topping

Method
 

Preparation Steps
  1. In a small bowl, combine the honey, olive oil, lime juice, and cinnamon and whisk to blend. Set aside.
  2. Heat the grill or a grill pan over medium-high heat.
  3. When hot, lightly coat the grates with oil spray to prevent sticking.
  4. Lightly brush the pineapple slices with the prepared marinade.
  5. Grill the pineapple, turning once and basting once or twice with the remaining marinade, until tender and golden, about 3-4 minutes on each side.
  6. Serve warm, optionally with a scoop of ice cream.

Notes

For best results, use fresh pineapple. If out of season, canned pineapple packed in juice (not syrup) can be used, but fresh is preferred for grilling. Don't forget to spray your grill to prevent sticking!
