  • 1 head cauliflower, chopped
  • 1 cup cashews
  • 1 tablespoon turmeric
  • 8 cups water
  • 2 teaspoons salt
  • 1 squeeze lemon juice

Method
 

Preparation Steps
  1. Heat the oil in a deep soup pot. Add the onion, garlic, cauliflower, cashews, and turmeric. Sauté for 10 minutes or until very fragrant.
  2. Add the water and salt. Simmer until the cauliflower is tender, about 15 minutes.
  3. Transfer the soup to a blender and blend until smooth. Return to the pot.
  4. Add lemon juice to taste and stir to combine. Garnish with crispy chickpeas and serve hot.
