These pumpkin dessert bars are incredibly easy to make, thanks to a yellow cake mix. They're a fast, simple, and totally addicting alternative to traditional pumpkin pie, perfect for fall gatherings.

Ingredients
  

Pumpkin Mixture
  • 1 can pumpkin puree 15 oz
  • 1 can evaporated milk 12 oz
  • 1 cup white sugar
  • 0.5 cup brown sugar
  • 4 large eggs beaten
  • 1 tsp cinnamon
  • 0.25 tsp salt
  • 0.25 tsp ginger
  • 0.5 tsp ground cloves
Topping
  • 1 box yellow cake mix 15-ounce, with pudding
  • 2 sticks unsalted butter melted (1 cup)

Preparation Steps
  1. Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius).
  2. In a large mixing bowl, combine the pumpkin puree, evaporated milk, white sugar, brown sugar, beaten eggs, cinnamon, salt, ginger, and cloves. Mix until well combined.
  3. Pour the pumpkin mixture evenly into a 9x13 inch baking pan.
  4. Sprinkle the dry yellow cake mix evenly over the top of the pumpkin mixture. Do not mix it in.
  5. Carefully pour the melted butter evenly over the dry cake mix layer.
  6. Bake for about 1 hour and 30 minutes, or until the center is set and a toothpick inserted comes out clean. The top should be golden brown.
  7. Let the bars cool completely before serving. You can chill them in the refrigerator for an even firmer texture. Cut into squares and enjoy!

Notes

These pumpkin bars are fantastic on their own, but also great with a dollop of whipped cream or a dusting of powdered sugar. Store leftovers in an airtight container in the refrigerator.
