  • 0.5 pound bacon
  • 3 large russet potatoes peeled and chopped into 1/2-3/4 inch pieces
  • 1 teaspoon kosher salt
  • 0.75 teaspoon freshly ground black pepper
  • 1.5 cups shredded cheddar cheese
  • 3 green onions sliced green onions thinly sliced

Preparation Steps
  1. Cook the bacon: Spread the bacon strips on a baking sheet and bake at 400°F for 16-18 minutes until crispy. Remove and drain on paper towels.
  2. Prepare the potatoes: While bacon is cooking, peel and chop potatoes. Toss potatoes in bacon grease on the same baking sheet, sprinkle with salt and pepper, then bake at 400°F for 20 minutes, stir, then bake another 20 minutes, then another 15 minutes.
  3. Finish and serve: Remove potatoes from oven, chop bacon into small pieces, sprinkle cheese and bacon over potatoes, return to oven for 2-3 minutes until cheese melts, then top with sliced green onions before serving.
