  • 1.5 cup all purpose flour
  • 0.75 cup unsweetened cocoa powder
  • 1.5 teaspoons baking powder
  • 0.5 teaspoon salt
  • 0.5 cup vegetable oil
  • 1 cup packed brown sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 0.5 cup powdered sugar for coating

Method
 

Preparation Steps
  1. Whisk together flour, cocoa powder, baking powder, and salt in a medium bowl. Set aside.
  2. Using a hand mixer, mix oil, brown sugar, eggs, and vanilla. Slowly mix in dry ingredients. The dough will be very wet.
  3. Chill the bowl of cookie dough for at least 30-45 minutes, or until you're able to scoop and roll the dough without it falling apart.
  4. Preheat oven to 350°F (175°C). Line two cookie sheets with parchment paper or silicone baking mats.
  5. Place powdered sugar in a small bowl. Scoop 1 or 2 tablespoon balls of dough. Roll the cookies in the powdered sugar then evenly space them on the prepared cookie sheets.
  6. Bake for about 7-10 minutes, depending on size, rotating pans halfway through baking. The cookies should look set but still soft.

Notes

Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely. Store in an airtight container at room temperature.
