Ingredients
  

Main Ingredients
  • 4 cups chicken bones
  • 1 each onion quartered
  • 1 each carrot sliced
  • 2 stalks celery chopped
  • 2 cloves garlic crushed
  • 2 sprigs thyme
  • 3 leaves bay leaves
  • 1 pinch peppercorns
  • 1 tbsp salt kosher

Method
 

Preparation Steps
  1. Place all ingredients into a large stockpot and cover with water.
  2. Bring to a boil over high heat, then reduce to low and simmer uncovered for 3 hours.
  3. Strain the stock through a fine-mesh sieve, discarding solids.
  4. Cool the stock to room temperature and store in airtight containers.

Notes

Use the chicken stock immediately or refrigerate for up to 3 days, or freeze for longer storage.
