Preparation Steps
- Place chicken bones, onion, carrot, celery, garlic, thyme, bay leaves, peppercorns, and salt into a large stockpot. Cover with water.
- Bring to a boil over high heat, then reduce to low and simmer uncovered for 3 hours, skimming foam as it forms.
- After simmering, strain the stock through a fine-mesh sieve into another container. Discard solids.
- Let the stock cool completely before storing in airtight containers in the refrigerator for up to 3 days or freeze for up to 3 months.
