Preparation Steps
- In a large pot, heat a tablespoon of oil over medium heat. Add diced onion, carrots, and celery; sauté for 5 minutes until slightly softened.
- Add minced garlic and cook for another minute until fragrant.
- Pour in chicken broth, add dried thyme, salt, and pepper. Bring to a boil.
- Add the chicken breast to the broth. Reduce heat to low and simmer for 20 minutes, or until chicken is cooked through.
- Remove chicken from the pot, shred into bite-sized pieces, and return to the soup. Cook for an additional 5 minutes to meld flavors.

Feel free to add noodles or rice for a more filling soup.
