  • 1 head cauliflower about 2 pounds, chopped into small florets
  • 2 large eggs
  • 0.5 cup breadcrumbs Panko recommended for extra crispiness
  • 0.5 cup shredded cheddar cheese
  • 0.25 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley chopped
  • 1 clove garlic minced
  • 0.5 teaspoon onion powder
  • 0.25 teaspoon black pepper
  • 0.5 teaspoon salt
  • 2 tablespoons olive oil for greasing the baking sheet

Preparation Steps
  1. Steam or boil cauliflower florets until very tender, about 8-10 minutes. Drain well and let cool slightly.
  2. Transfer cooled cauliflower to a large bowl and mash thoroughly with a fork or potato masher until no large lumps remain.
  3. Add eggs, breadcrumbs, cheddar cheese, Parmesan cheese, parsley, minced garlic, onion powder, salt, and pepper to the mashed cauliflower. Mix until well combined.
  4. Scoop about 1 tablespoon of the mixture and form into small, bite-sized tots or patties.
  5. Preheat oven to 400°F (200°C). Lightly grease a baking sheet with olive oil. Arrange the cauliflower bites in a single layer.
  6. Bake for 20-25 minutes, flipping halfway through, until golden brown and crispy.
  7. Serve hot with your favorite dipping sauce, such as ranch or marinara.

Notes

These cauliflower bites are great for meal prepping. You can bake them ahead of time and reheat in an air fryer or oven for a quick snack.
