- Add butter to a large skillet over medium-low heat. Once melted, stir in the stuffing mix and cook for 5 minutes, until golden brown. Set aside.
- Add carrots to a medium-sized pot and fill with water about an inch above the carrots. Boil for 7 to 9 minutes, until carrots are tender. Drain water.
- Add butter to a skillet over medium heat. Once the butter is melted, add the onions and sauté until soft, about 7 minutes.
- In a large bowl, stir together the cooked carrots, sautéed onions, cream of celery soup, salt, pepper, and shredded cheddar cheese.
- Spread the carrot mixture evenly in a 9x13 inch casserole dish. Top with the prepared stuffing mixture.
- Bake at 350°F (175°C) for 20 minutes, or until heated through and the topping is golden brown. Serve hot.
