  • 0.5 cup balsamic vinegar
  • 1.5 tsp honey *optional
  • 20 oz tomatoes about 3 medium, sliced
  • 16 oz fresh mozzarella sliced into 1/3-inch pieces
  • 0.5 cup fresh basil leaves
  • 0.25 cup extra virgin olive oil
  • to taste Salt and freshly ground black pepper

Method
 

Preparation Steps
  1. Whisk together balsamic vinegar and honey in a small saucepan. Bring to a simmer over medium heat, then reduce heat to low and let simmer until thickened and reduced to about 2 tablespoons, approximately 8-11 minutes.
  2. Pour into a small bowl and let cool to room temperature, about 10 minutes.
  3. Layer sliced tomatoes, fresh mozzarella, and basil leaves on a serving platter.
  4. Drizzle with olive oil and balsamic reduction, then season with salt and pepper to taste. Serve immediately.
