Ingredients
  

Main Ingredients
  • 1 tbsp Cajun or Creole seasoning
  • 24 pieces extra jumbo shrimp (1 pound each)
  • 6 oz fully cooked Turkey/Chicken Andouille sausage or kielbasa
  • 1 medium zucchini sliced into 1/4-inch thick half moons
  • 1 medium yellow squash sliced into 1/4-inch thick half moons
  • 1 large red bell pepper seeded and cut into thin 1-inch pieces
  • 0.25 tsp kosher salt
  • 2 tbsp olive oil

Method
 

Preparation Steps
  1. In a large bowl, combine the Cajun seasoning and shrimp, toss to coat.
  2. Add the sausage, zucchini, squash, red bell pepper, and salt; toss with the oil.
  3. Preheat the air fryer to 400°F.
  4. Transfer the shrimp and vegetables to the air fryer basket in two batches and cook for 8 minutes, shaking the basket 2-3 times.
  5. Set aside, then repeat with remaining shrimp and vegetables.
  6. Combine both batches and cook for an additional 1 minute in the air fryer.

Notes

Feel free to add other vegetables like onions or peppers for variation.
