  • 1 yellow onion chopped
  • 0.5 cup corn
  • 0.5 cup carrots peeled and chopped
  • 0.5 cup green pepper chopped
  • 3 cloves garlic minced
  • 2 cans black beans 15 oz cans, drained and rinsed
  • 1 can fire roasted diced tomatoes 14.5 oz can
  • 4 cup vegetable broth
  • 1 tsp cumin
  • 1 tsp thyme
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp cayenne pepper
  • 2 tsp lime juice
  • 0.25 cup fresh cilantro chopped, for garnish, optional
  • 0.25 cup sour cream for garnish, optional

Method
 

Preparation Steps
  1. Place all ingredients except the lime juice and garnishes in a 6 quart slow cooker and cook on low for 6-8 hours.
  2. Stir in lime juice just before serving.
  3. Garnish with chopped cilantro and sour cream.
