  • 15 ounce black beans, canned no salt added, rinsed and drained
  • 1 cup cooked quinoa red or tri-color
  • 1 cup corn fresh or frozen
  • 1 small red bell pepper chopped
  • 1 cup fresh mango chopped
  • 0.25 cup red onion finely chopped
  • 0.5 cup fresh cilantro chopped
  • 1 small jalapeño pepper seeded and finely diced
Dressing
  • 1 medium lemon or lime juice
  • 1.5 tablespoon extra virgin olive oil
  • 2 clove garlic minced
  • 0.5 teaspoon ground cumin
  • 0.5 teaspoon chili powder
  • 0.25 teaspoon ground turmeric

Method
 

Preparation Steps
  1. Mix together the beans, quinoa, corn, bell pepper, mango, onion, cilantro, and jalapeño in a large mixing bowl.
  2. In a small bowl, whisk together the lemon or lime juice, olive oil, minced garlic, ground cumin, chili powder, and ground turmeric until well combined.
  3. Drizzle the dressing over the bean and quinoa mixture and toss gently to ensure everything is evenly coated.
  4. Refrigerate the salad for at least 30 minutes before serving to allow the flavors to meld. Serve chilled.
