Ingredients
  

Main Ingredients
  • 2 pounds ground beef
  • 1 medium white or yellow onion chopped
  • 1 medium green bell pepper chopped
  • 2 tablespoons taco seasoning
  • 1 can red enchilada sauce
  • 8 tortillas flour tortillas 8 inch
  • 3 cups shredded cheddar cheese sharp cheddar preferred

Method
 

Preparation Steps
  1. In a large skillet over medium-high heat, cook ground beef, onion, and green bell pepper until beef is well cooked and no longer pink, about 8 minutes. Drain excess grease if necessary.
  2. Add taco seasoning to the skillet and stir to combine. Cook for 1 minute.
  3. Stir in 1/2 cup of red enchilada sauce and mix well.
  4. Add salt to taste.
  5. Spread 1/2 cup of enchilada sauce in the bottom of a 9x13-inch baking dish.
  6. Assemble enchiladas by placing 1/3 cup of beef mixture in the center of each tortilla, add cheese, then roll and place seam-side down in the dish.
  7. Repeat with remaining tortillas and beef mixture.
  8. Pour remaining enchilada sauce over the rolled tortillas and sprinkle with remaining cheese.
  9. Bake uncovered at 425°F for 20-25 minutes until cheese is bubbly and golden.

Notes

Feel free to add flavor with diced jalapenos or serve with sour cream and cilantro for extra zest.
