Ingredients
  

Brownie Base
  • 0.5 cup unsalted butter
  • 1 cup sugar
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.33333333333333 tsp salt
  • 2 large eggs
  • 1 cup mashed bananas about 2 medium bananas
  • 1 cup all-purpose flour
  • 0.5 cup unsweetened cocoa powder
Strawberry Cream Cheese Frosting
  • 8 oz cream cheese softened
  • 0.5 cup unsalted butter softened
  • 4 cup powdered sugar
  • 0.25 cup seedless strawberry jam
  • 2.5 tbsp milk
  • 1 drop red food coloring optional

Method
 

Preparation Steps
  1. Preheat oven to 350°F.
  2. Grease a 9x13 inch baking dish with non-stick cooking spray.
  3. Using an electric mixer, beat butter at medium speed for 30 seconds.
  4. Mix in sugar, baking soda, baking powder and salt.
  5. Mix in eggs and mashed banana.
  6. Beat in flour and cocoa powder until just combined.
  7. Pour batter into prepared pan and spread evenly.
  8. Bake brownies for 20-25 minutes or until a toothpick inserted comes out clean.
  9. Remove from oven and allow brownies to cool completely in the pan.
  10. While brownies cool, prepare frosting by beating cream cheese, butter, powdered sugar, strawberry jam, and milk until smooth and creamy.
  11. Spread frosting over cooled brownies. Garnish with whipped cream, chopped walnuts, and a cherry if desired.

Notes

For best results, use room temperature ingredients when mixing the batter and frosting.
