  • 4 large russet potatoes
  • 2 tablespoons unsalted butter
  • 0.25 teaspoon Lawry’s seasoned salt
  • 0.25 teaspoon garlic powder
  • 3 tablespoons bacon bits (or 3 slices bacon cooked and crumbled)
  • 2 tablespoons chives
  • 1 cup shredded cheddar cheese
  • serving sour cream for serving

Method
 

Preparation Steps
  1. Preheat oven to 425°F.
  2. Wash potatoes. Pierce each potato with a fork on all sides, 4-5 times minimum.
  3. Place potatoes directly on the oven rack and bake for 45 minutes or until tender.
  4. Remove from oven and let cool until they can be handled comfortably.
  5. Cut potatoes in half lengthwise. Scoop out the inside, leaving the skin about ¼ inch thick.
  6. Combine melted butter, seasoned salt, and garlic powder in a small bowl. Brush over the top and bottom of the potato skins and place cut side down on a baking sheet.
  7. Bake for 15 minutes, flip, and bake an additional 5 minutes until crisp.
  8. Fill each potato skin with cheese and bacon. Return to oven for 5 minutes until cheese melts. Garnish with chives and serve with sour cream.
