  • 1 large avocado ripe
  • 0.5 cup fresh cilantro packed
  • 0.5 cup plain Greek yogurt non-fat
  • 0.25 cup lime juice freshly squeezed
  • 2 tablespoon olive oil
  • 1 clove garlic minced
  • 0.25 teaspoon salt or to taste
  • 0.125 teaspoon black pepper freshly ground

Method
 

Preparation Steps
  1. Halve the avocado, remove the pit, and scoop the flesh into a blender or food processor.
  2. Add the fresh cilantro, Greek yogurt, lime juice, olive oil, minced garlic, salt, and pepper to the blender.
  3. Blend until smooth and creamy. If the dressing is too thick, add a tablespoon of water at a time until desired consistency is reached.
  4. Taste and adjust seasoning if needed.
  5. Serve immediately or store in an airtight container in the refrigerator for up to 3 days.
