autumn spice granola

For a taste of fall, enjoy this healthy, homemade Pumpkin Granola recipe made with oats, quinoa, flax seed, maple syrup, pumpkin puree, pumpkin spice, cinnamon, pecans, pepitas and dried cranberries.

Main Ingredients
  • 0.25 cup uncooked quinoa rinsed well and pat dry with paper towel
  • 1.5 cups rolled oats
  • 0.25 cup ground flaxseeds
  • 0.25 cup pepitas or other seed
  • 0.25 cup chopped pecans
  • 0.5 cup dried cranberries
  • 0.25 cup real maple syrup or honey
  • 0.25 cup pumpkin puree
  • 1 tsp coconut oil
  • 1 tsp pumpkin spice or more to taste
  • 0.25 tsp cinnamon
  • 1 pinch kosher salt
  • 0.5 tsp vanilla extract

Method
 

Preparation Steps
  1. Preheat oven to 325F.
  2. Spread the oats and quinoa out on a parchment lined baking pan.
  3. Toast in the oven 10 minutes, stirring once.
  4. Remove the oats from the oven, pour the toasted oats into a medium bowl and add the ground flax seeds, pepitas, pecans and dried fruit.
  5. Reduce oven to 300F.
  6. In a second medium bowl, combine maple syrup, pumpkin puree, oil, pumpkin spice, cinnamon, salt and vanilla.
  7. Pour over oats and stir together with a spatula.
  8. Spread back onto a baking sheet and bake an additional 20 minutes, or until golden.

Notes

Store homemade granola in an airtight container at room temperature for up to 2 weeks.
