  • 2 oz fresh asparagus
  • 1 tbsp light mayonnaise
  • 1 clove garlic
  • 3 oz ciabatta bread
  • 0.5 oz prosciutto
  • 0.33 cup baby arugula
  • 1 slice low-fat Swiss cheese
  • 1 spray olive oil

Method
 

Preparation Steps
  1. Preheat the panini grill.
  2. Lightly spritz the asparagus with olive oil and season with salt and pepper.
  3. Grill the asparagus for about 3-4 minutes until tender but still crisp.
  4. In a small bowl, combine mayonnaise and minced garlic.
  5. Spread the garlic mayonnaise inside the sliced ciabatta bread.
  6. Layer the cheese, prosciutto, grilled asparagus, and arugula on the bread.
  7. Close the sandwich and lightly spray the outside with olive oil.
  8. Place the sandwich in the panini press and cook until the bread is toasted and the cheese melts, about 5 minutes.
  9. Remove from the press, cut in half, and serve immediately.

Notes

You can add a slice of tomato for extra flavor.
